School of cookie
Guide
Hi!

Hi! I'm Ola, the magician of Cookie Academy. Welcome to this Cookie Castle!
Let me introduce you to the environment here!
[Interior Environment]
On the left side facing the big book, there are entrances to the restroom and Cookie Knowledge Gallery. Going upstairs, you can learn various small facts about cookies! On the right side is a cookie shop where you can bring your favorite snacks home!
Now look up and you can also see a small train in the air.
(You can watch the video below to see the entire interior!)
[Xianxi Township]
Cookie Academy is located in Xianxi Township near North Changhua Sea Line.
Driving west for 13 minutes will take you to beautiful Rouzongjiao Beach
Going south for 16 minutes will take you to popular Lukang Old Street.
[Meaning of Beach Cleaning]
The amount of garbage on Taiwan's West Coast collected by beach cleaning activities averages at 3,500 tons per year (Environmental Protection Administration data from 2018).
The amount of underwater garbage is ten times that on land. Among them, plastic waste accounts for most of it because it cannot be decomposed. This has caused many marine creatures such as whales, turtles, birds that rely on oceans for survival to mistakenly eat ocean plastic waste and suffer innocent deaths. It may also return back into human food chain.
Beach cleaning does not require everyone to come with a "remorseful" attitude towards laboring at beaches.
Instead, we want to convey the concept of "reducing waste at its source". Otherwise, garbage will never be completely picked up. We hope everyone understands that these wastes are actually produced by us every day.
"Beach cleaning means picking up trash for ourselves; every piece reduced after returning home counts as beach cleaning."
Cookie History
────────
Hi there! I'm Potter, the wizard from Biscuit Academy. You must have had biscuits before!
Today, let me introduce to you the origin of biscuits. We can categorize their history into different types:
1.Crack: These first appeared in the prehistoric era around 10,000 years ago. Primitive farmers mixed flour and water to form a paste, which was then baked on hot stones. Due to their simplicity and ease of storage, they became one of the earliest portable dry foods, particularly favored by long-distance sailors and seafarers. The modern cookie industry originated in 19th century England, a developed maritime nation that needed to supply provisions for long sea voyages, with savory crackers being one of them.
2.Sweet cookies have two names: "cookie" and "biscuit."
The earliest recorded mention of "cookie" can be traced back to the ancient Persian dynasty. During that time, the Persian empire had a flourishing sugar industry and a variety of sugar-based products, including the development and production of cookies. Later, with the Muslim invasions of Europe and the subsequent Crusades, cookie-making techniques were introduced to Europe.
"Biscuit" derives from the French words "bis" (twice) and "cuit" (baked), meaning "twice-cooked bread." Biscuits are made from flour, water or milk, without the need for yeast, making them suitable as a long-lasting food for journeys. The earliest recorded biscuit recipe dates back to ancient Rome when people would mix wheat flour into a paste, cook it, let it dry on a plate, and then fry it, finally sprinkling it with honey or pepper to enhance the flavor.
By now, you may have realized that the long shelf life of cookies makes them great companions for journeys! Want to know the three basic ingredients of modern cookies? The answer is right above in the ingredient showcase.
Cookie Ingredients
────────
Hi, I'm the magician Potter! Now let me introduce the early stages of cookie production!
【Mixing】
Do you know the three basic ingredients of cookies? The answer is flour, butter, and sugar. To combine these three ingredients and form a dough, you'll need the mixer right in front of you. This mixer is the first large-scale mixer used in the Cookie Academy, but it has since been retired. The current mixers are about three to four times larger than this one. Depending on the desired flavor of the cookies, additional ingredients like chocolate, nuts, dried fruits, spices, etc., will be mixed in.
Taiwan YouGood cookie school's OEM factory has provided manufacturing services for many brands to date, including well-known American supermarkets such as Carrefour, France market such as Carrefour. The basic order quantity for clients is usually around 500 kilograms of dough.
【Rolling and Flattening】
If the dough is not rolled out and flattened properly, it can result in uneven thickness of the cookies, preventing them from baking evenly and affecting their texture and taste. Once the dough is rolled out into a sheet, we can move on to the next step of shaping.
When the dough is rolled into a sheet, we can move on to the next step of shaping.
Baking Expertise
──────
Hello everyone, I am Potter, the magician of Cookie Academy. The place you are standing now is the Histyory Corridor of Cookie Academy. Let me introduce to you the history of this castle in Xianxi.
High-quality products and noble character, that's where Taiwan YouGood got its name from. Founder Mr. Wu Rich believed that both quality and character were important when it came to making food, so he named his company " Taiwan YouGood ". Interestingly enough, because the pronunciation of yougood is similar to "yogurt". Even today there are many first-time visitors who come into our shop wanting to buy yogurt due to this beautiful misunderstanding. However, it also gives them a chance to understand that we make world-class cookies in Taiwan.
In 1998, Mr. Wu Rich was originally engaged in wholesale egg business at home. During the process of delivering eggs to various pastry and bread shops, he gradually realized that baking seemed like a way not to go hungry. He then went on to work for other major bakeries before returning home in 1998 with determination to start his own baking kingdom - "Taiwan YouGood Food Company". In the early days, they only had a 70 square feets factory with five employees specializing in producing traditional Chinese wedding cakes, mooncakes,
Ten catties(6kg) big cakes and more! If you go upstairs towards the end of their production line today there will be an actual display of Ten catties(6kg) big cakes.
Until now, all kinds of Chinese pastries are still our popular products which have helped us become OEM partners for many well-known hotels (e.g., Taipei Grand Hotel) and Michelin-starred restaurants during Mid-Autumn Festival Mooncake season!
OEM & ODM
也從這時,我們逐步從OEM(代工)跨足ODM(設計代工)。
──────
In 2007, by chance, The Kraft Heinz, the largest food company in America and second largest globally, came to Xianxi. They were amazed that such a small factory could mechanize and standardize cake production cake production while also controlling the source of each batch of raw materials and having standardized operating procedures. This led to a partnership with Taiwan YouGood Food.
Since then, we have gradually moved from OEM (original equipment manufacturing) to ODM (original design manufacturing).
Today, Taiwan YouGood Food has come a long way. From producing over 60 tons of biscuits per day, we now have four production lines capable of producing over 60 tons of cookies per day. Every step of the journey has been challenging.
One of the most famous products of The Kraft Heinz Company is " Butter Coconuts Cookies", which has been manufactured by Taiwan YouGood Food for several years now. In addition to domestic sales, these products are exported to China and the United States among other countries through partnerships with more than 60 manufacturers who continue working closely with Yoghurt Food.
The "Butterfly Pie" on display in the hallway was the first product produced under contract for American companies and remains our best-selling biscuit today. Please feel free to try it at our shop!
Taiwan You Good School of Cookie
──────────
【The Driving Force Behind Castle Construction】
In 2014, Taiwan experienced a tainted oil scandal that severely impacted the image of the food industry. Taiwan YouGood, having implemented advanced management techniques practiced in developed countries, including source control, not only successfully navigated the food safety crisis but also experienced a significant increase in orders.
Founder Mr. Wu Ruiqi believes that "production is not just about making things well, but also managing them well." Taiwan Yogurt has always been committed to this principle. The establishment of the factory tour allows consumers to witness a real and transparent production process and management system, while also providing food safety education to visiting tourists. Industry peers can visit and learn about control techniques and systems from overseas. Another significant purpose is to educate consumers that only a small minority of dishonest businesses add unsafe substances, while the vast majority of businesses are conscientious and trustworthy.
Therefore, in the same year, in response to the Ministry of Economic Affairs' promotion of industrial tourism, Taiwan Yogurt Food Company underwent an evaluation and transformed into a factory tour facility, giving birth to the "Taiwan Yogurt Cookie Academy."
Choosing Xianxi Township as the location for the Castle of Cookies is because the Taiwan You Good School of Cookie has more than just sharing food safety concepts—it also has three missions to fulfill! So, what are these missions? Let's find out as we move on to the next stop!
──────
【Reasons for Building the Castle in Xianxi】
Xianxi is the hometown of the founder, and this town is located near Taichung and Lugang, but its population is only 16,000 people.
Compared to neighboring towns with a population of 70-80 thousand people, Xianxi has fewer resources in education and economy. The establishment of Biscuit College in Xianxi also hopes to promote local development, increase employment opportunities and traffic flow. It also brings millions of tourists to Xianxi every year.
Task 1 - Education
The surplus from Taiwan YouGood School of Cookie will be allocated as an educational fund to sponsor Xiaoyang Elementary School, Xianxi Elementary School, and Xianxi Junior High School in Xianxi. It also sponsors the expenses for the participation of the junior high school baseball team from Xianxi.
Task 2 - Environment
Every two months, volunteers and company employees are called upon to participate in cleaning up meat dumpling corners on beaches in Xianxi. Until now, there have been hundreds of volunteers participating each time.
Task 3 - Local Goodness
Established "Love Meals" by cooperating with nearby stores through supplies or meal vouchers so that disadvantaged families can also have food security.
Established "Ling Fong Farm" to help local agricultural products (onions, cabbage) match first-level processing plants before conducting second-level biscuit outsourcing (onion biscuits, vegetable sticks) to enhance added value for agricultural products.
Holds an annual event called "Onion Picking and Onion Biscuits DIY," which allows everyone to learn about the process from fields to tables so that they can cherish food more.
Cookie Rolling Molds
─────────
Hi, I'm Ola, a wizard from the academy. What you're seeing now are "rolling molds" that once had revolutionary emotions with Taiwan YouGood School of Cookie.
When making cute shaped cookies by ourselves, we can buy individual molds and press them like stamps to create shapes. However, considering Taiwan's production of 60 tons of cookies per day, the "rolling mold" method is more efficient.
These molds have created a history of producing 3,000 pieces of cookies in one day. Each mold has its own story.
Can you find out where the first rolling mold of the Taiwan YouGood is?
Packaging & Materials
────────
Hi! I'm Ola, a wizard from the Academy of Magic. Seeing you here, I assume you already know about the ingredients and molding process of cookies.
Now let's talk about cookie packaging!
Apart from ingredients, packaging is actually the most important factor that affects the shelf life of cookies.
A well-packaged military ration can even last for more than three years!
The factors that affect cookie freshness can be divided into "sunlight, oxygen, and moisture", all of which accelerate oxidation in cookies. Different types of packaging have different ways to isolate these factors.
It's difficult to vacuum pack cookies, so some use nitrogen instead to isolate oxygen, such as common potato chip packaging or single film-coated cookie packaging. These methods are effective in preserving freshness.
Some consumers choose zipper bags for economic reasons.
Some consumers may worry that handmade cookies only last for a week while store-bought ones can last for months due to added preservatives. Here Ola debunks a myth: compared with other foods, cookies have lower moisture content and good packaging alone can achieve great preservation effects. The cookies made by our academy contain no artificial preservatives!
Tunnel Oven
──────────
Hi, I'm Potter, the magician of Cookie Academy! After listening to Ola's introduction just now, let me introduce you to this physical production line equipment!
The long metal cabinet in front of you with a tunnel-like structure inside is called the "tunnel oven". Most people's impression of an oven is a "hot air oven" with doors and upper and lower shelves. However, such ovens have limited production capacity.
Speaking of which, Potter wants to tell everyone that the daily production capacity of Taiwan YouGood Food can reach 60 tons, about 17 container trucks' worth! So being able to accommodate such high production capacity depends entirely on the "tunnel oven" in front of you.
This production line is one of the four major production lines at the academy. The tunnel oven used here is about 70 meters long, while Asia's largest tunnel oven is about 80 meters long and happens to be located at Taiwan YouGood school of Cookie! It serves another production line upstairs for making delicious Butter coconuts cookies.
Our tunnel oven is longer than those found in general factories and can control temperature at multiple stages according to different types of cookies produced. Therefore, one single production line can produce many different types of cookies!
Want to know more about our other production lines? The next stop will be introduced by Ola!
Metal Detector
─────────
Each time we produce different types of cookies, the entire academy is filled with the aroma specific to that particular cookie. Senior employees can even tell what type of cookie is being produced just by smelling it when they come to work!
The conveyor belt for transporting biscuits from the tunnel oven to packaging is about 400 meters long - roughly equivalent to running a lap around a school track. Only through this natural cooling process can biscuits achieve their most consistent and perfect texture and aroma.
Looking inside there is another machine called a metal detector which can detect whether each biscuit contains any metal or even moisture containing metal! Therefore every single cookie here ensures that consumers can eat them with peace of mind!
Automated Manufacturing

Walking along this production line corridor, Oula would like to talk to you about the benefits of machine-made cookies.
[Fast Efficiency]
From the tunnel oven and conveyor belt in the front section, we can see how cookies are mass-produced.
[Hygiene]
We also notice the attire of personnel inside. Unlike DIY at home, they cannot expose any hair and must wear gloves and shallow shoes. Before entering, all personnel must pass through a ventilation facility that blows away all dust from their bodies.
Cookies are tested for weight, moisture content, taste, microorganisms before packaging.
Only then will they enter the packaging line that you see.
[Standardization]
This is Ola's favorite advantage. From confirming cookie recipes with customers to completing production, we can ensure that every piece has the same taste, aroma, color and size. Every cookie in each package is equally delicious - it's a great thing!
※ Looking towards the other wall there are many food safety certifications we have obtained. For those who have come this far welcome downstairs later on to enjoy our safe and delicious cookies!
The Biggest Wedding Cake
────────
The earliest Chinese wedding custom was for the groom's family to send wedding cakes to the bride's family, who would then distribute them among their own relatives and friends. For the groom, it was a way of expressing gratitude towards his in-laws for raising his bride; for the bride's family, it was a way of sharing their joy with loved ones over their daughter's marriage.
As times changed, this tradition became simplified so that only the bride's family distributed cakes among their relatives and friends.
Today, Chinese wedding cakes typically weigh one jin (500g) or five liang (250g). However, traditional wedding cakes could weigh as much as five or even ten jin (3-6kg). This is because the heavier and more elaborate the cake is, the more face-saving it is for those receiving it - symbolizing that both families are wealthy.
What you see before you now is a ten-jin Dragon-and-phoenix bride cake made from real ingredients with pineapple filling. These large cakes are produced by Taiwan YouGood every six months to a year! Although rare nowadays, some couples still choose to have these customized by our academy at prices ranging from NT$3000-NT$6000 per cake.
Interestingly enough, since these cakes cannot be damaged in any way during transport or delivery due to superstitions surrounding weddings in China - all ten-jin cakes must be picked up personally by newlyweds themselves instead of being shipped via logistics services.
Taiwan YouGood School of Cookie also offers custom-made Chinese and Western-style wedding cakes for couples. You can find many sample displays in the our shop!
Magic Train

Hi! I'm Potter, and we've arrived at the last stop of the Biscuit Knowledge Corridor - Banxian Magic Station. The station was created because its founder, Mr. Wu Rich, felt that making biscuits from production line to baking in an oven was like a train passing through a tunnel. To realize this image, he built this mini aerial train station.
By the way, let me tell you a secret: besides being skilled in baking, the founder is also a railway enthusiast with a degree in mechanical engineering. The wood you see here has all been lying on real railroad tracks before. All rail installations and train constructions were built by Taiwan YouGood's professional engineering team under his leadership!
At the same time, this small station also pays tribute to Changhua's fan-shaped garage - one of only two such garages in Asia. You are welcome to visit it too!
※Fun fact: If you observe closely inside arriving trains, you'll notice there are racks installed inside each carriage; they're meant for cooling freshly baked cookies while taking them for a ride around (not yet implemented).
※Trivia: "Banxian" is an old name for Changhua County because it's where "Banxian Tribe" of Pingpu people lived. During Emperor Yongzheng's reign in Qing Dynasty era (1723-1735), he changed its name to Changhua.
This is our final audio guide stop; Potter says goodbye now! If you want to see me and Ola again later on, we'll be waiting at the our shop - Take us home!
